I am a fan of grab and go food. It makes my mornings so much easier.
A little bit of prep relieves a whole lot of headache if you need to eat on the run no matter the reason. If it’s a day I’m going into the office, I can grab a bag from the freezer and throw it in my bag, and actually get there on time!
Preparing chicken seasoned for tacos or burritos is super easy… especially in your crock pot. You can freeze enough in a gallon bag for a family meal, or do like I do and prepare several smaller bags to use for lunch at the office.
Just remember to keep shells or tortillas on hand, a little picante sauce and an avocado (another great grab and go food) and you have all you need for a tasty sensible lunch.
Taco-seasoned Crockpot Chicken
- 1 packet of taco seasoning
- 1 cup chicken broth
- 1 lb boneless skinless chicken breast
- Dissolve taco seasoning into chicken broth.
- Place chicken breasts in crock pot and pour chicken broth over.
- Cover and cook on low for 6-8 hours.
- With two forks, shred the chicken meat into bite-size pieces.
- To freeze, place shredded meat into freezer bags with the juices.
