In many parts of the country summer heat is already past the ‘breaking a sweat’ mark. And you may not realize how quickly you can become dehydrated.
Considering that your body is 60 percent water, even mild dehydration can impact your body temperature, heart rate and blood pressure. In fact, it can affect your heart like smoking a cigarette. That’s why it’s very important to know the sneaky signs of dehydration.
Water is great, of course, but it’s also a good idea to consume foods that help replenish nutrients that are lost due to dehydration. One such nutrient, potassium, is a very important one. Potassium helps carry nutrients to your cells, fuel your muscles, maintains blood pressure and promotes heart health.
So when I came across this delicious lemonade recipe utilizing a potassium-rich fruit, I knew it had to be one of my summer staples. This refreshing drink was created by Quick & Simple‘s Perfect Picnic Dish Contest runner-up Shelly Stetsko of Castlegar, British Columbia.
Rhubarb is not a true fruit, but it’s a popular ingredient in jellies, jams and pies so most people treat it as one — and it’s great addition to old-fashioned, thirst-quenching lemonade.
Rhubarb Lemonade
- 6 lemons
- 2 stalk rhubarb
- 1 cup sugar
- 4 cups water
- Peel the zest from four lemons and set aside. Squeeze juice from all six lemons.
- Combine rhubarb, lemon zest, sugar and 2 cups water in saucepan. Bring to a boil and stir until sugar is dissolved and rhubarb is tender.
- Strain mixture and add lemon juice. Allow to cool thoroughly.
- Before serving, add remaining 2 cups of water and pour over ice.
