I’ve always loved Halloween. When I was young, I enjoyed dressing up and trick-or-treating. When I was a teenager and young adult, I enjoyed dressing up and going to Halloween parties. When my kids were young, I enjoyed dressing them up and taking them trick-or-treating. And now that they’re teenagers, I enjoy watching Halloween-themed movies with them.
This year, we’re planning to watch a Harry Potter flick or two, or three, or all eight. And in keeping with the theme, I’m going to make pumpkin juice. Loaded with vitamin A and fiber, pumpkin isn’t just tasty; it’s also good for you. Now, if only I could figure out how to make chocolate frogs that actually jumped!
Pumpkin juice
- 4 cups pumpkin chunks (1/2 – 1 whole pie pumpkin)
- 1 apple, chunked
- 2 carrots, chunked
- ¼-inch piece ginger
- cinnamon
- nutmeg
- Put pumpkin, apple, carrots and ginger through a juicer.
- Pour the juice into a large glass and add ice if desired.
- Sprinkle with cinnamon and nutmeg.
