I sent my boys to the grocery store the other day, and they brought back a snack for me: green bean fries. They were frozen and covered in breading, so they weren’t exactly healthy. But they were tasty. In fact, they were tasty enough that I decided to look for a recipe for green bean fries so I could make a healthier version as an occasional treat. I found and adapted a recipe, and now I can indulge in green bean fries guilt-free.
Green beans are an excellent source of vitamin K, which improves bone health and reduces the risk of bone fractures. That’s especially important to me because I’m at the age when osteoporosis becomes a concern. When my mother was about my age, she stepped off a stoop wrong and broke her foot. I don’t want that to happen to me, so I make a point of eating foods that boost bone health. Bring on the green beans!
Green bean fries
- 1 pound green beans
- ½ teaspoon garlic powder
- ¼ teaspoon black pepper
- ¼ teaspoon sea salt
- ¼ cup olive oil
- Preheat the oven to 450 degrees F.
- Place the green beans in a bowl, sprinkle with spices, add olive oil and toss to coat.
- Line a baking sheet with aluminum foil. Spread the green beans evenly on the sheet.
- Bake for 25 minutes or until they brown and appear crispy around the edges.
