Do you ever have one of those mornings when everybody oversleeps and you’re having to rush, rush, rush to get out the door? Unfortunately, as the school year draws to a close, we’re having more and more of those. And it’s on mornings like these when my panicked daughter begs me to fix her lunch for her. The problem is that she’s a picky eater. When the boys are rushed, they’ll slap together some sandwiches for lunch. But my daughter isn’t so easy to please.
Luckily, I figured out a combo that I can pull together quickly and easily and that she really likes. We always have hummus on hand since we all enjoy it. So I’ve started keeping cucumbers on hand for just this occasion. I make these little sandwiches and toss some grapes in a baggie as a side, and she’s happy.
Cucumber and hummus sandwiches
- 1 cucumber
- 1 teaspoon hummus per sandwich
- Wash and slice cucumber. There’s no need to peel it unless you just want to.
- Spread hummus on one slice of cucumber and top with another. Repeat until all the slices of cucumber are used.
