One of my favorite things about spring and summer is eating fresh fruit often. I especially enjoy having it for breakfast, most often in my favorite smoothie recipe. But sometimes I need something that feels a little more solid on my stomach… something with a sweet and satisfying crunch.
A cheesy, fruity English muffin fits the bill. It’s filling but I can still feel good about every one of the ingredients… whole wheat English muffins helps me get closer to meeting the daily quota for my favorite anti-aging nutrient — fiber; the ricotta cheese is packed with protein and calcium (don’t forget these other nutrients that help prevent osteoporosis too); the strawberry’s polyphenols help regulate blood sugar spikes; the heart healthy walnuts are a no-brainer… and a drizzle of naturally sweet honey brings it all together.
You may not be accustomed to having cheese with breakfast, outside of an omelet, but around the world, cheese is a popular breakfast food. Cheese is very satiating and may help you avoid unhealthy snacks or overeating at lunch when you have it with breakfast.
Cheesy, fruity, filling English muffins
- 1 English whole-wheat muffin, toasted
- 2 tablespoons of ricotta cheese
- A few fresh strawberries, sliced thin
- ¼ cup chopped walnuts
- Toast your English muffin halves, then spread each half with ricotta cheese.
- Layer strawberry slices and top with a sprinkling of walnuts.
- Lightly drizzle with honey
